When I was first diagnosed with celiac, I fell down the rabbit hole of limiting gut-healing diet tips and tricks.
I cut out sugar, avoided all grains, tried all of the autoimmune diets and I drove myself crazy trying to make sure I was avoiding gluten PLUS what felt like 100 other foods that I was told would prevent me from healing.
Looking back, I realized that NOT only was it unrealistic or mentally healthy to spend hours meal-prepping and trying to make sure I ate “perfectly” so my gut would heal… it also made it harder to live and enjoy my life with celiac.
Living gluten-free is stressful enough. Adding on even more restrictions in the name of health was suffocating me.
